IGL Duty Free – F&B Sustainability

IGL Duty Free took a proactive approach to sustainability by introducing locally sourced food & beverage options at its Stanstead location in Quebec, Canada. With a budget of US$5,000, the initiative focused on elevating the airport dining experience while supporting local businesses.

A key component of the strategy was a partnership with Montreal-based Van Houtte coffee, a brand championing sustainability since 1919. IGL Duty Free also expanded its food selection to include products from Maison Gorchon, a business based 5km from the airport.

Maison Gorchon uses compostable packaging from a Quebec supplier, employs local talent and collaborates with a nearby bakery for fresh bread and pastries. Additionally, its in-house meat roasting minimises transportation needs, further reducing environmental impact. They source some products from a farm operated by an employee’s family.

IGL Duty Free reported a positive customer response to the initiative, with a noticeable increase in satisfaction. The project highlighted how focus on quality, sustainability and local sourcing can drive meaningful change, even within a modest budget.
